Кашкавалени хлебчета с чесново масло / Cheese Rolls with Garlic Butter


Хлебчетата с масло и кашкавал на Йоли са така пленителни, че изместиха всичко друго в списъка на детенце „Искам да опитам” :)

Оказа се, че нямаме сминдух, затова импровизирах с чесновото масло на  Kimberly - това момиче е истинска богиня в кухнята!!!



Yoli’s Rolls with butter and cheese are so fascinating, that pushed anything else from the kid’s "I want to try” list :)

As I haven’t got any Fenugreek at home, I’ve improvised with Kimberly’s Garlic Butter - this girl is a real goddess in the kitchen! 
 



Необходими продукти:

За тестото:

500 г. брашно (плюс допълнително за  доомесване)
1 яйце – на стайна температура
250мл. прясно мляко – леко затоплено
2 с.л. зехтин
1 ч.л. захар
1 ч.л. сол
20 г. прясна  мая

За плънката:

100 г. кашкавал, настърган на едро
50 г. чесново масло, замразено

За чесновото масло:

50 г. масло, на стайна температура
1 с.л. магданоз, нарязан на ситно
1 скилидка чесън, пресована
Щипка сол (по желание)

За глазурата:

1 яйце, леко разбито
1 с.л. сусам
1 с.л. маково семе



Ingredients:

For the dough:

500 g flour (plus extra to knead)
1 egg - at room temperature
250 ml milk - warm
2 tablespoons olive oil
1 tsp sugar
1 tsp salt
20 g yeast

For the Filling:

100 g cheese, grated
50 garlic butter, frozen

For the Garlic Butter:

50 g butter at room temperature
1 tablespoon parsley, chopped
1 clove garlic, minced
Pinch of salt (optional)

For the Glaze:

1 egg, lightly beaten
1 tablespoon sesame
1 tablespoon poppy seed



Начин на приготвяне

Преди да започнем с тестото, приготвяме чесновото масло.



Размачкваме с вилица отпуснатото на стайна температура масло и добавяме ч с.л. ситно нарязан пресен магданоз, пресована скилидка чесън и щипка сол (по желание). Размесваме добре.


Firstly, prepare the Garlic Butter.

Add 1 tablespoon parsley flakes, 1 clove minced garlic and a pinch of salt (optional) to 50 g softened butter. Mix well. 




Прехвърляме сместа върху лист пластично фолио,  оформяме на руло и завиваме с фолиото стегнато.



Roll firmly in a plastic wrap.




Замразяваме в камера или фризер за 2-3 минути - за по-лесно нарязване, или за 4-5 минути - за по-лесно настъргване. Съхраняваме в хладилник.


В голяма купа или купата на електрически миксер разтваряме маята в затопленото мляко и  прибавяме яйцето, зехтина и  захарта. Разбъркваме добре.

В отделна купа смесваме ½ част от брашното и солта и добавяме към разбърканите вече течни съставки. Разбъркваме на средна скорост и оставяме да отпочива за около 10 минути.

Добавяме останалото брашно, докато се получи меко и еластично тесто, което се отделя от стените на купата. Ако тестото е прекалено меко, добавяме 1-2 с.л. брашно, а ако се получи твърдичко, добавяме 1-2 с.л. затоплено мляко или вода.

Покриваме купата с еластично фолио или кърпа и оставяме да отпочива 15-ина минути на топло.

Докато тестото отпочива, настъргваме кашкавала и втвърденото вече чесново масло и размесваме добре. Оставяме в хладилник докато приготвим корите.

Изсипваме тестото от купата върху равна набрашнена повърхност и разделяме тестото на две равни части.
Разточваме правоъгълни кори около 40х60 см. всяка, с дебелина около 0.5 см. 


Поръсваме равномерно всяка от корите със смесените кашкавал и чесново масло.

Навиваме на руло - всяка от корите поотделно и нарязваме на трапецовидни парчета  (8-10 см. в основата).

Застиламе с пекарска хартия подходяща тава или намасляваме и поръсваме с браашно и подреждаме хлебчетата на разстояние едно от друго – да не слепнат при печенето.

Покриваме с фолио или кърпа и оставяме да втасат на топло за около 15 минути.

Притискаме леко хлебчетата по средата с пръчица (или дръжката на дървена лъжица), покрита с брашно, за да се разтворят пластовете на тестото по-добре.


Chill in the freezer for 2-3 minutes for ease cutting or 4-5 minutes for easy grating. Store in a fridge.

Preheat oven to 360 F (180 C).

In a large bowl or bowl of electric mixer, dissolve yeast in warm milk and add egg, oil and sugar. Mix well.

In a different bowl mix ½ of the flour and salt and add it to liquid ingredients. Mix at medium speed and leave to rest for about 10 minutes.

Add the remaining flour until gradually until getting soft and elastic dough, which is separating from the walls of the bowl. If dough is too soft, add 1-2 tablespoons flour, or if it’s too hard, add 1-2 tablespoons warm milk or water.

Cover the bowl with plastic wrap or a cloth and leave to rest for about 15 minutes.

While dough is resting, shred cheese and frozen garlic butter and mix well. Leave in refrigerator.

Pour the dough out of the bowl onto a flat floured surface and divide it into two equal parts.

Using a rolling pin, roll 2 rectangular crusts 40x60 cm each about 0.5 cm thick.

Sprinkle evenly each of the crusts with mixed shredded cheese and garlic butter.

Roll each crust separately and cut trapezoidal pieces (
about 8-10 cm at the base).

In a pan oiled and sprinkled with flour or on a bakery paper, arrange rolls leaving space in between, so rolls will not stick to each other while baking.

Cover with plastic wrap or cotton cloth and leave to rise in a warm place for about 15 minutes.

Lightly press the rolls in the middle with a stick (or the handle of wooden spoon), coated with flour to let the layers of dough open better.


Намазваме с разбито яйце и поръсваме половината със сусам, а другата половина с маково семе (по желание) или с настърган кашкавал.

Печем в предварително загрята на 180 С фурна за около 25 минути или до златисто.


Spread with lightly beaten egg and sprinkle half of the rolls with sesame seeds and half with poppy seeds (or shredded cheese - optional)

Bake in preheated to 360 F (180 C) oven for about 25 minutes or until golden.





И имаме пристрастяващо вкусни хлебчета, които може би не е удачно да предложим единствено ;) за десерт...

And we have addictively tasty rolls, that we maybe couldn't serve only as a dessert ;)
